Mysore Pak Sweet Treat (Print Version)

# Ingredients:

01 - ½ cup chickpea flour (besan/kadalai maavu)
02 - ⅓ cup melted ghee or vegan ghee
03 - ¾ cup powdered sugar
04 - 1 tbsp raw sugar (optional)

# Instructions:

01 - Grease a plate generously with ghee and set aside. In a microwave-safe bowl, add sifted chickpea flour and 1 tsp of ghee. Mix well and microwave for 30 seconds. Remove, remix, and microwave for another 30 seconds to properly roast the besan.
02 - Add the remaining melted ghee to the roasted flour and mix thoroughly. Incorporate powdered sugar next. The mixture will be thick initially but will loosen as it cooks.
03 - Microwave for 45 seconds. Remove and mix well, observing how the ghee has separated and incorporated into the mixture.
04 - Microwave again for 30 seconds until the mixture bubbles and becomes frothy. Continue with a final 15-second interval, then immediately transfer to the greased plate.
05 - Spread the mixture evenly in the greased plate. Sprinkle raw sugar on top if desired. Allow to cool for about 20 minutes before slicing. The floating ghee will gradually be absorbed as it cools, creating a soft texture. For faster setting, refrigerate after initial cooling but never when hot.

# Notes:

01 - Vegan ghee may take longer to be absorbed than dairy ghee. For best results, allow the ghee to be fully absorbed rather than draining it off.
