Mini Caprese Cups (Print Version)

# Ingredients:

01 - 1 cup diced tomatoes
02 - 1/2 cup mini mozzarella balls
03 - 1 tablespoon finely chopped basil
04 - 1 1/2 teaspoons olive oil
05 - Kosher salt and fresh ground black pepper to taste
06 - 15 mini phyllo shells
07 - Balsamic glaze for drizzling

# Instructions:

01 - Combine the tomatoes, mini mozzarella balls, chopped basil, olive oil, salt, and pepper in a bowl. Stir until ingredients are evenly coated, then adjust seasoning to taste.
02 - Spoon equal amounts of the tomato-mozzarella mixture into each mini phyllo shell.
03 - Drizzle with balsamic glaze and serve immediately to prevent the phyllo cups from becoming soft.

# Notes:

01 - Best if made and served right away to maintain the crispness of the phyllo cups.
