Microwave Peanut Butter Fudge (Print Version)

# Ingredients:

01 - 1 ¾ cups (298g) white chocolate chips
02 - ½ cup (135g) creamy peanut butter
03 - 14 oz sweetened condensed milk
04 - ¼ tsp salt
05 - 1 tsp vanilla extract

# Instructions:

01 - Line an 8 or 9 inch square baking pan with aluminum foil or parchment paper.
02 - Place all the ingredients in a microwave-safe glass bowl.
03 - Microwave for 1 minute on 50% power. Stir, then microwave for another 30-45 seconds on 50% power. Stir until smooth and melted. If the mixture is not fully melted, microwave for another 30-45 seconds on 50% power.
04 - Quickly pour the fudge into the prepared pan, using a spatula to smooth and distribute the mixture evenly.
05 - Allow it to cool on the counter for 2-3 hours, then cut into pieces. For easier cutting, place in the fridge to chill for 30 minutes before cutting.

# Notes:

01 - Store fudge in an airtight container at room temperature for 2-3 weeks.
02 - For longer storage (up to 4 weeks), keep in an airtight container in the refrigerator.
03 - To freeze: Chill fudge in the refrigerator for 1 hour, then wrap tightly in plastic wrap and place inside a ziplock freezer bag. Frozen fudge keeps for up to 3 months. Thaw in the refrigerator for 24 hours before serving.
