Add olive oil, sliced garlic, fresh parsley, balsamic vinegar, oregano, and red pepper flakes to a measuring cup or mason jar. Mix until well combined.

Add feta to a medium sized bowl and pour olive oil mixture over the cheese. Let feta marinate for 30-60 minutes at room temperature.

While the cheese is marinating, prepare crostini according to your preferred method.

Pour feta and oil mixture into a shallow serving dish. Add another splash of balsamic vinegar and serve with crostini.
