# Ingredients:

→ Apple Filling

01 - 4 cups Honeycrisp apples, unpeeled, sliced 1/4" thick
02 - 2 teaspoons lemon juice
03 - 3/4 cup granulated sugar
04 - 4 tablespoons flour
05 - 1 teaspoon ground cinnamon
06 - 2 teaspoons vanilla extract
07 - Kosher salt, a few pinches

→ Crisp Topping

08 - 1/2 cup flour
09 - 1/2 cup old fashioned rolled oats
10 - 1/2 cup brown sugar
11 - 1/2 teaspoon ground cinnamon
12 - 6 tablespoons cold butter, cubed
13 - Kosher salt, large pinch

# Instructions:

01 - Heat oven to 375°F (190°C) and lightly grease a 9" cast iron skillet.
02 - In a large bowl, combine sliced apples, lemon juice, granulated sugar, flour, cinnamon, vanilla extract, and salt. Toss gently with your hands to coat the apples evenly in the mixture.
03 - Transfer the apple mixture into the greased cast iron skillet, spreading evenly.
04 - In a medium bowl, combine flour, oats, brown sugar, cinnamon, cold cubed butter, and salt. Use your hands, a fork, or a pastry cutter to work the mixture until the butter is broken into pea-sized pieces.
05 - Spread the topping in an even layer over the apples.
06 - Bake for 30 minutes or until the apples are fork-tender and the crisp topping is dark golden brown.
07 - Serve warm with vanilla ice cream.

# Notes:

01 - For best results, choose firm Honeycrisp apples that hold their shape during baking.
02 - Allow the crisp to rest for 15 minutes before serving to let the juices set.
