Sweet Cherry Almond Chia Pudding (Print Version)

# Ingredients:

→ Base Pudding

01 - 300g whole sweet cherries, pitted (fresh or frozen)
02 - 400ml coconut milk
03 - 60ml maple syrup
04 - 1 teaspoon almond extract
05 - 1 teaspoon vanilla extract
06 - 1/8 teaspoon sea salt
07 - 120g chia seeds
08 - 80g hemp seeds

→ Topping

09 - 600g sweet cherries, halved and pitted

# Instructions:

01 - In a blender, combine pitted cherries, coconut milk, maple syrup, almond extract, vanilla extract, and sea salt. Blend until completely smooth.
02 - Add chia and hemp seeds to the blender and pulse on low speed just until combined. Do not over-blend.
03 - Distribute mixture into serving containers, filling each about halfway (approximately 240ml per portion).
04 - Refrigerate for at least 1 hour to allow pudding to set before adding cherry topping. This prevents the fruit from sinking into the pudding.
05 - Top each portion with halved cherries and serve chilled.

# Notes:

01 - Store in refrigerator for 4-5 days in sealed containers.
02 - For best texture, allow pudding to set completely before serving.
