Slow Cooker Vegetable Curry (Print Version)

# Ingredients:

01 - 1 can (400 ml) coconut milk
02 - 1 can (400 ml) diced tomatoes, undrained
03 - 2 cups mixed vegetables (carrots, bell peppers, peas, etc.)
04 - 1 onion, chopped
05 - 3 cloves garlic, minced
06 - 1 tablespoon curry powder
07 - 1 teaspoon cumin
08 - Salt and pepper, to taste
09 - Fresh cilantro, for garnish
10 - Cooked rice or naan, for serving

# Instructions:

01 - In the slow cooker, combine coconut milk, diced tomatoes, mixed vegetables, onion, garlic, curry powder, cumin, salt, and pepper.
02 - Stir to combine all ingredients well.
03 - Cover and cook on low for 6-7 hours or high for 3-4 hours, until the vegetables are tender.
04 - Serve hot, garnished with fresh cilantro, alongside rice or naan.
