Vegan Mango Kesari Sheera (Print Version)

# Ingredients:

→ Base Ingredients

01 - ½ cup fine semolina (sooji/rava)
02 - ¾ cup water
03 - ½ cup mango puree
04 - 1 drop mango essence (optional)
05 - ½ teaspoon cardamom powder
06 - 2 tablespoons sugar
07 - 1 pinch saffron strands

08 - Mixed nuts, chopped

# Instructions:

01 - Spread the semolina in a microwave-safe plate and heat for 30 seconds. Mix well to prevent lumps from forming.
02 - In a microwave-safe bowl, heat ¾ cup water for 1 minute. Carefully remove and stir once.
03 - Add cardamom powder, saffron strands, mango essence (if using) and mango puree to the hot water. Mix thoroughly and microwave for 30 seconds.
04 - Carefully remove the liquid mixture from microwave and stir once. Gradually add the toasted semolina while continuously stirring to prevent lumps.
05 - Microwave the semolina mixture for 45 seconds. Remove and stir vigorously to ensure a smooth consistency.
06 - Add the sugar and mix thoroughly to incorporate.
07 - Microwave the sweetened mixture for a final 30 seconds. Stir well after removing from microwave.
08 - Serve the kesari warm, garnished with chopped nuts or fresh mango slices.

01 - This is a quick microwave version of the traditional Indian dessert Kesari, adapted with mango for a fruity twist.
02 - For best results, serve warm as the texture firms up when cooled.
