Spread the semolina in a microwave-safe plate and heat for 30 seconds. Mix well to prevent lumps from forming.

In a microwave-safe bowl, heat ¾ cup water for 1 minute. Carefully remove and stir once.

Add cardamom powder, saffron strands, mango essence (if using) and mango puree to the hot water. Mix thoroughly and microwave for 30 seconds.

Carefully remove the liquid mixture from microwave and stir once. Gradually add the toasted semolina while continuously stirring to prevent lumps.

Microwave the semolina mixture for 45 seconds. Remove and stir vigorously to ensure a smooth consistency.

Add the sugar and mix thoroughly to incorporate.

Microwave the sweetened mixture for a final 30 seconds. Stir well after removing from microwave.

Serve the kesari warm, garnished with chopped nuts or fresh mango slices.
