01 - 1.5 lbs boneless, skinless chicken thighs
02 - 1 cup coconut milk
03 - 1/2 cup peanut butter
04 - 1/4 cup soy sauce
05 - 2 tbsp lime juice
06 - 2 tbsp brown sugar
07 - 3 cloves garlic, minced
08 - 1 tsp ginger, grated
09 - 1/2 tsp red pepper flakes (optional)

10 - Chopped peanuts
11 - Chopped green onions

→ Serving

12 - Cooked rice or noodles

# Instructions:

01 - In a bowl, whisk together coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic, ginger, and red pepper flakes until smooth.
02 - Place the chicken thighs into the slow cooker and pour the prepared peanut sauce over the top.
03 - Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
04 - Serve the cooked chicken over rice or noodles, garnished with chopped peanuts and green onions.
