Spring Salad with Lemon Basil (Print Version)

# Ingredients:

→ Spring Salad

01 - 5 ounces spring green mix
02 - 1 head butter lettuce, roughly torn
03 - 1 pound thin asparagus, ends trimmed, sliced into 2.5 cm pieces
04 - 115 g sugar snap peas, trimmed, sliced into 1.25 cm pieces
05 - 120 ml frozen petite peas, thawed
06 - 4 radishes, trimmed and thinly sliced
07 - 2 green onions, thinly sliced
08 - 1 avocado, sliced or cubed
09 - 4 slices bacon, cooked and crumbled
10 - 60 ml roasted salted sunflower seeds
11 - 60 ml sliced almonds
12 - 115 g goat cheese, torn into smaller pieces

→ Lemon Basil Vinaigrette

13 - 80 ml packed fresh basil leaves, roughly chopped
14 - 3 tablespoons fresh lemon juice
15 - 1 green onion, roughly chopped
16 - 2 garlic cloves, peeled and roughly chopped
17 - 1 teaspoon Dijon mustard
18 - 1/2 teaspoon honey or sugar
19 - 1/4 teaspoon each dried oregano, salt, pepper
20 - 120 ml olive oil

# Instructions:

01 - Combine all vinaigrette ingredients in a high-powered blender and blend until smooth, with some basil pieces remaining. Scrape down the sides as needed. Chill until ready to serve (if serving immediately, place in freezer for up to 30 minutes). After chilling, adjust seasoning with additional lemon juice, honey, salt or pepper as desired.
02 - In a large bowl, combine the spring salad mix and torn butter lettuce leaves; toss thoroughly to integrate.
03 - For immediate consumption: Combine all salad ingredients in a large bowl, drizzle with desired amount of dressing and toss to combine. For anticipated leftovers: Combine all ingredients except avocado and bacon, allowing individuals to add these toppings and dressing to their portions. For a customizable experience: Arrange ingredients in separate bowls to create a salad bar for guests to assemble their own combinations.

01 - Butter lettuce may be substituted with additional spring salad mix or spinach
02 - Goat cheese can be replaced with feta for a different flavor profile
