Preheat your oven to 200°C (390°F). Grease a baking dish or individual ramekins with unsalted butter and dust with sugar.

In a large bowl, whisk together the 3 whole eggs, 15g sugar, salt, flour, milk, and vanilla extract until smooth.

In a separate bowl, whisk the 3 egg whites until soft peaks form. Gradually add the 35g sugar, whisking until stiff peaks form.

Gently fold the whipped egg whites into the egg mixture until just combined.

Pour the batter into the prepared dish or ramekins, filling them about 3/4 full.

Bake for 13-15 minutes, until the top is golden and the center is set.
