Pistachio Lush Layered Dessert (Print Version)

# Ingredients:

→ CRUST

01 - 1 cup all-purpose flour
02 - 1/2 cup unsalted butter, cold and cut into pieces
03 - 1 cup walnuts, finely chopped

→ CHEESE LAYER

04 - 226g (8 oz) cream cheese, room temperature
05 - 1 cup confectioner's sugar
06 - 1 cup whipped topping

→ PISTACHIO LAYER

07 - 2 packages instant pistachio pudding mix
08 - 3 cups milk

→ TOPPING

09 - 2 cups whipped topping
10 - 1/2 cup almonds, toasted

# Instructions:

01 - Preheat oven to 175°C (350°F). In a large bowl, add the flour and cold butter pieces. Using a pastry blender or two knives, cut the butter into the flour until the mixture resembles small peas. Stir in the chopped walnuts.
02 - Press the mixture firmly into a 33 x 23 cm (13 x 9-inch) baking pan. Bake for 20 minutes until lightly golden. Remove from oven and cool completely.
03 - Beat cream cheese, confectioner's sugar and 1 cup of whipped topping until the mixture is smooth and silky. Spread this evenly across the cooled crust.
04 - Prepare pistachio pudding by whisking the pudding mix into the milk for 1-2 minutes until it begins to thicken. Spread the pudding evenly on top of the cheese layer.
05 - Refrigerate for 2-3 hours until set. Top with the remaining 2 cups of whipped topping and sprinkle with toasted almonds before serving.

01 - For best results, allow cream cheese to soften at room temperature for at least 30 minutes before mixing
