Moroccan Lamb Tagine Delight (Print Version)

# Ingredients:

01 - 2 lbs lamb shoulder, cut into chunks
02 - 1 onion, chopped
03 - 3 cloves garlic, minced
04 - 1 can (14 oz) diced tomatoes, undrained
05 - 1 cup chicken or vegetable broth
06 - 1/2 cup dried apricots, chopped
07 - 1/2 cup raisins
08 - 2 tsp ground cumin
09 - 2 tsp ground coriander
10 - 1 tsp cinnamon
11 - Salt and pepper, to taste
12 - Fresh cilantro, for garnish
13 - Cooked couscous or rice, for serving

# Instructions:

01 - In the slow cooker, combine lamb, onion, garlic, diced tomatoes, broth, apricots, raisins, cumin, coriander, cinnamon, salt, and pepper.
02 - Stir to combine all ingredients well.
03 - Cover and cook on low for 8-10 hours or high for 4-5 hours, until the lamb is tender.
04 - Serve hot over couscous or rice, garnished with fresh cilantro.
