Lemon Loaf with Icing (Print Version)

# Ingredients:

→ Cake Batter

01 - 3 eggs
02 - 1 cup sugar
03 - 1 cup full-fat Greek yogurt or sour cream
04 - 1/2 cup melted coconut oil
05 - 2 tbsp lemon zest
06 - 3 tbsp lemon juice
07 - 1 tsp vanilla extract
08 - 1.5 cups all-purpose flour
09 - 2 tsp baking powder
10 - 1/2 tsp salt

→ Icing

11 - 1 cup powdered sugar
12 - 2-3 tbsp lemon juice

# Instructions:

01 - Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan. Optionally, line the bottom with parchment paper.
02 - In a large bowl, whisk together eggs and sugar. Using a hand mixer is recommended for best results.
03 - Add Greek yogurt, melted coconut oil, lemon zest, lemon juice, and vanilla extract. Beat the mixture until creamy and well combined.
04 - In a medium bowl, combine all-purpose flour, baking powder, and salt. Mix thoroughly to ensure even distribution.
05 - Gradually incorporate the dry ingredients into the wet ingredients, mixing until the batter is fully combined.
06 - Pour the batter into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan.
07 - While the loaf cools, whisk together powdered sugar and lemon juice in a small bowl until smooth.
08 - Once the loaf is fully cooled, pour the icing evenly over the top.
09 - Slice and serve as desired.
