Lamb Kefta Spiced Patties (Print Version)

# Ingredients:

01 - 450g plant-based meat substitute, or ground meat or poultry
02 - 1 medium onion or 4 scallions (white and tender green parts), finely chopped
03 - 60g chopped toasted cashews, or 50g toasted pine nuts
04 - 35g chopped dried cranberries, or dried currants
05 - 30g chopped fresh parsley, cilantro, and mint (single herb or mix)
06 - 1-2 large eggs

→ Spices & Seasonings

07 - 2 teaspoons ground cumin
08 - 1 1/4 teaspoons ground turmeric
09 - 3/4 teaspoon ground cinnamon
10 - 1/2 teaspoon ground allspice or cloves
11 - 1/4 teaspoon crushed red pepper flakes
12 - 1 1/2 teaspoons kosher or sea salt (1 teaspoon if using Morton's kosher salt)
13 - Freshly ground black pepper or Aleppo pepper, to taste

# Instructions:

01 - In a medium bowl, combine the meat substitute (or meat or poultry) with the onions or scallions, all spices and salt. Season liberally with black or Aleppo pepper. Add the cashews or pine nuts, cranberries, fresh herbs, and 1 egg. Mix thoroughly with clean hands until all ingredients are well incorporated.
02 - If the mixture seems dry and won't hold together, beat another egg in a small bowl and add just enough to bind the mixture. If it becomes too soft, cover and chill for a few hours to make forming patties easier.
03 - Shape the kefta mixture into patties approximately 7-8cm (3 inches) round. Arrange them in a single layer on a parchment-lined plate.
04 - Cook patties on a medium-high grill, first brushing the grate with oil. Turn once during cooking until thoroughly cooked, which should take just a few minutes. Alternatively, cook in a skillet with vegetable oil or simmer in spiced tomato sauce until done.
