Tunisian Almond Ring Cookies (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 cups almond flour (finely ground blanched almonds)
02 - 1 1/2 cups all-purpose flour
03 - 3/4 cup powdered sugar
04 - Pinch of salt

→ Wet Ingredients

05 - 1/2 cup unsalted butter, softened
06 - 1 egg white
07 - 1 tsp orange blossom water (or rose water)
08 - 1 tsp vanilla extract

# Instructions:

01 - In a large mixing bowl, combine almond flour, all-purpose flour, powdered sugar, and salt. Mix thoroughly. Add softened butter and rub in with your fingers until the mixture becomes crumbly.
02 - Add egg white, orange blossom water, and vanilla extract. Mix and knead gently until a smooth dough forms. If needed, add a teaspoon of water at a time until the dough becomes pliable.
03 - Roll small portions of dough into thin logs and form into rings about 4 cm in diameter. Gently seal the ends and smooth the seams to create perfect circles.
04 - Preheat oven to 150°C. Line a baking sheet with parchment paper. Arrange rings evenly on the prepared sheet and bake for 15–20 minutes. The cookies should remain pale and not brown.
05 - Transfer cookies to a wire rack and allow to cool completely to firm up. Store in an airtight container or serve with mint tea or Arabic coffee.
