Homemade Sausage (Print Version)

# Ingredients:

01 - 450g pork shoulder or ground pork

→ Seasonings

02 - 1 tablespoon fresh sage, minced
03 - 1 tablespoon fresh thyme, minced
04 - 1½ teaspoons red pepper flakes
05 - 1½ teaspoons paprika
06 - ¼ teaspoon nutmeg
07 - 3 garlic cloves, grated
08 - 1½ teaspoons brown sugar
09 - 1½ teaspoons coarse salt
10 - 1 teaspoon black pepper
11 - 1 tablespoon cooking oil

# Instructions:

01 - If using pork shoulder, cut into 2.5 cm chunks and chill for 15-20 minutes, then grind using a medium die.
02 - Thoroughly combine all seasonings with the ground pork, including herbs, spices, garlic, sugar, salt and pepper.
03 - Cook a small test patty in a skillet and taste to adjust seasonings if needed.
04 - Shape the seasoned meat mixture into 6-8 cm diameter patties of even thickness.
05 - Heat oil in a skillet over medium heat. Cook patties for 3-4 minutes on each side until golden brown and fully cooked through. Serve hot.

# Notes:

01 - For best results, keep all meat and equipment chilled during preparation to maintain proper texture.
02 - These sausage patties can be prepared ahead and refrigerated for up to 2 days before cooking.
