Dice peaches by cutting them into slices around the pit, then into rough cubes.

Spread diced peaches on a parchment-lined baking sheet and freeze until firm, at least 4 hours.

Place frozen peaches, lemon juice, cinnamon, and maple syrup (if using) into a food processor.

Process until fruit begins to form clumps. Stop to break up chunks and continue processing until completely smooth, approximately 3-4 minutes.

Serve immediately for soft-serve consistency, or freeze for 3-4 hours for firmer texture. For optimal smoothness, stir every 30 minutes during freezing to prevent ice crystal formation.
