In a medium bowl, whisk together protein powder, flour, baking powder, and salt until well combined.

Add water, egg whites (or additional water), yogurt (or applesauce), and sweetener to the dry ingredients. Whisk until smooth. If necessary, add more liquid one tablespoon at a time until batter reaches proper consistency.

Preheat waffle iron according to manufacturer's instructions. Once hot, thoroughly grease the cooking surfaces.

Pour batter into the center of the preheated waffle iron and close. Cook according to manufacturer's directions until waffles are light golden and crispy. Re-grease waffle iron between each batch.
