Cilantro Lime Shrimp Tacos (Print Version)

# Ingredients:

→ Chipotle Slaw

01 - 4 cups shredded green or purple cabbage
02 - 1/2 cup thinly-sliced green onion
03 - 2 tablespoons minced chipotle in adobo sauce
04 - 2 tablespoons mayonnaise
05 - 1 tablespoon honey or agave nectar
06 - 1 teaspoon lime juice
07 - 2 tablespoons buttermilk
08 - Salt and pepper to taste

→ Grilled Cilantro Lime Shrimp

09 - 1/2 cup freshly-squeezed lime juice
10 - 3 tablespoons minced fresh cilantro
11 - 1 tablespoon honey or agave nectar
12 - 2 medium cloves garlic, minced
13 - 1/4 cup extra-virgin olive oil
14 - 680g medium shrimp (peeled and deveined)

→ Assembly

15 - 10 (15cm) corn or flour tortillas, warmed
16 - Lime wedges for serving
17 - Additional cilantro for garnish
18 - Cotija cheese for topping

# Instructions:

01 - In a large bowl, combine cabbage, green onion, and chipotle. In a separate small bowl, whisk mayonnaise, honey, lime juice, and buttermilk until smooth. Pour dressing over cabbage mixture and toss until evenly coated. Season with salt and pepper to taste and refrigerate until ready to serve.
02 - In a large shallow bowl, whisk lime juice, cilantro, honey, garlic, and olive oil until smooth. Season with salt and pepper to taste. Reserve 60ml (1/4 cup) of the mixture and set aside. Toss shrimp in remaining marinade and allow to marinate for 15 minutes only (longer marination will begin to cook the shrimp due to acidity).
03 - Preheat an outdoor grill to medium-high heat or prepare a well-greased large nonstick pan on stovetop. Remove shrimp from marinade and pat dry with paper towels. If using outdoor grill, place shrimp on a sheet of nonstick aluminum foil. Cook shrimp for 3-5 minutes, turning once, until golden-brown and opaque throughout.
04 - Transfer grilled shrimp to a bowl and toss in the reserved marinade until evenly coated.
05 - Place a few shrimp in each warmed tortilla and top with chipotle slaw. Garnish with freshly-squeezed lime, cilantro, and cotija cheese before serving.

# Notes:

01 - For best flavor, prepare the slaw at least 30 minutes before serving to allow flavors to meld.
02 - Shrimp cook very quickly - be careful not to overcook as they will become tough and rubbery.
