01 -
Preheat the oven to 175°C (350°F). Grease and line two 23cm (9-inch) cake pans with parchment paper.
02 -
In a saucepan, heat the Guinness and butter over medium heat until melted. Remove from heat and whisk in the cocoa powder and sugar until smooth. Let cool slightly.
03 -
In a separate bowl, whisk together sour cream, eggs, and vanilla extract. Stir this mixture into the cooled Guinness mixture.
04 -
In another bowl, sift together the flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until fully combined.
05 -
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely before frosting.
06 -
In a large bowl, beat the butter until light and creamy. Gradually add the powdered sugar, followed by Bailey's Irish Cream, vanilla extract, and salt, mixing until smooth.
07 -
Spread the Bailey's frosting between the cake layers and over the top. Slice and serve with a glass of Irish coffee for an authentic experience.
