In a large bowl, combine chicken thighs, onion powder, soy sauce, salt, pepper, and chicken bouillon. Toss thoroughly to coat. Refrigerate for at least 30 minutes, or overnight for enhanced flavor.

Melt butter in a saucepan over medium heat. Add minced garlic and ginger, cooking until fragrant, approximately 1 minute. Whisk in hoisin sauce, apple juice, soy sauce, bourbon, and brown sugar. Reduce heat to low and simmer for 5-7 minutes until slightly thickened. Remove from heat and set aside.

Set air fryer temperature to 190°C (375°F).

Thread marinated chicken pieces onto 20 cm wooden skewers, approximately 6 pieces per skewer.

Arrange skewers in a single layer in the air fryer basket. Lightly coat with cooking spray and cook for 8 minutes.

Reserve a portion of the bourbon sauce for serving. Brush the skewers generously with the remaining sauce and continue cooking for 6-8 minutes, until chicken reaches an internal temperature of 74°C (165°F).

Brush cooked skewers with reserved bourbon sauce. Garnish with chopped scallions before serving.
