Air-Fried Bourbon Chicken Skewers (Print Version)

# Ingredients:

→ Chicken Skewers

01 - 3 lb boneless, skinless chicken thighs, cut into 2.5 cm pieces
02 - 1 tablespoon onion powder
03 - 2 teaspoons soy sauce
04 - 1 teaspoon kosher salt
05 - 1 teaspoon black pepper
06 - 1 teaspoon chicken bouillon
07 - Cooking spray
08 - Chopped scallions for garnish

→ Bourbon Sauce

09 - 3 tablespoons unsalted butter
10 - 4 garlic cloves, minced
11 - 1 tablespoon minced ginger
12 - 1 cup hoisin sauce
13 - ½ cup apple juice
14 - ½ cup soy sauce
15 - ½ cup bourbon
16 - ¼ cup brown sugar

# Instructions:

01 - In a large bowl, combine chicken thighs, onion powder, soy sauce, salt, pepper, and chicken bouillon. Toss thoroughly to coat. Refrigerate for at least 30 minutes, or overnight for enhanced flavor.
02 - Melt butter in a saucepan over medium heat. Add minced garlic and ginger, cooking until fragrant, approximately 1 minute. Whisk in hoisin sauce, apple juice, soy sauce, bourbon, and brown sugar. Reduce heat to low and simmer for 5-7 minutes until slightly thickened. Remove from heat and set aside.
03 - Set air fryer temperature to 190°C (375°F).
04 - Thread marinated chicken pieces onto 20 cm wooden skewers, approximately 6 pieces per skewer.
05 - Arrange skewers in a single layer in the air fryer basket. Lightly coat with cooking spray and cook for 8 minutes.
06 - Reserve a portion of the bourbon sauce for serving. Brush the skewers generously with the remaining sauce and continue cooking for 6-8 minutes, until chicken reaches an internal temperature of 74°C (165°F).
07 - Brush cooked skewers with reserved bourbon sauce. Garnish with chopped scallions before serving.

# Notes:

01 - For best results, soak wooden skewers in water for 30 minutes before use to prevent burning.
02 - The bourbon flavor intensifies as the sauce reduces. For a milder flavor, use less bourbon or increase the reduction time.
