BBQ Chicken Power Bowl (Print Version)

# Ingredients:

→ BBQ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 cup BBQ sauce (Halal)
03 - 1 tablespoon olive oil
04 - 1 teaspoon garlic powder
05 - 1 teaspoon paprika
06 - ½ teaspoon ground black pepper
07 - Salt to taste

→ Power Bowl Base

08 - 2 cups cooked quinoa
09 - 1 cup cherry tomatoes, halved
10 - 1 cup cucumber, diced
11 - 1 cup corn kernels
12 - 1 cup shredded carrots
13 - 1 avocado, sliced
14 - 1 tablespoon olive oil

→ Dressing

15 - 2 tablespoons olive oil
16 - 1 tablespoon apple cider vinegar
17 - 1 teaspoon honey
18 - Salt and pepper to taste
19 - ½ teaspoon dried oregano
20 - 1 teaspoon Dijon mustard

→ Optional Garnishes

21 - Chopped fresh cilantro or parsley
22 - Crumbled feta or goat cheese
23 - Sliced red onion
24 - Jalapeños or chili flakes

# Instructions:

01 - Season chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper. Rub seasoning evenly. Heat a grill or grill pan over medium-high heat. Grill chicken for 5-7 minutes per side until internal temperature reaches 165°F (75°C). Brush BBQ sauce over chicken during the last minutes of grilling. Remove chicken and let rest before slicing.
02 - Rinse quinoa under cold water. Combine 1 cup of quinoa with 2 cups of water or broth in a medium saucepan. Bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.
03 - Chop cherry tomatoes, cucumber, and shred carrots. Slice avocado. If using fresh corn, grill or sauté briefly. Toss all prepared vegetables with 1 tablespoon of olive oil in a large mixing bowl.
04 - Whisk olive oil, apple cider vinegar, honey, Dijon mustard, oregano, salt, and pepper in a small bowl until emulsified.
05 - Add cooked quinoa to bowls as a base. Arrange cherry tomatoes, cucumber, corn, shredded carrots, and sliced avocado around the quinoa. Top with grilled BBQ chicken. Drizzle dressing evenly over each bowl. Add optional garnishes as desired.
06 - Serve BBQ Chicken Power Bowls immediately or store in airtight containers for later. These bowls are great for meal prep and flavors improve with time.
