Baked Lime Chicken Bowls (Print Version)

# Ingredients:

→ Protein

01 - 2-3 lbs. boneless skinless chicken breasts, cut into cubes

→ Marinade

02 - 6 Tbsp. olive oil
03 - 3 Tbsp. red wine vinegar
04 - Juice from 2 limes
05 - 2 tsp. chili powder
06 - 1 tsp. paprika
07 - 1 tsp. garlic powder
08 - 1 tsp. kosher salt
09 - Fresh cracked pepper to taste

# Instructions:

01 - In a large resealable bag, combine olive oil, vinegar, lime juice, chili powder, paprika, garlic powder, salt and pepper.
02 - Cut chicken into cubes and add to marinade. Toss to coat. Marinate for 2 hours or up to overnight.
03 - Preheat oven to 400ºF. Pour marinated chicken onto baking sheet and bake in preheated oven for 20 minutes, or until chicken is cooked through.
04 - Serve with cooked quinoa and Lemon Green Beans Amandine or Roasted Brussels Sprouts (or other green vegetable).

# Notes:

01 - This is a great meal prep option that can be portioned into containers for quick weekday lunches or dinners.
02 - Chicken can be stored in airtight containers in the refrigerator for up to 4 days.
