Air Fryer Aloo Gobi (Print Version)

# Ingredients:

→ Vegetables

01 - 200 grams cauliflower florets
02 - 250 grams potato, cut into chunks

→ Spices and Seasonings

03 - 1 tbsp oil
04 - 1 tsp salt
05 - ½ tsp red chili powder
06 - ¼ tsp turmeric powder
07 - ½ tsp tandoori masala
08 - ½ tsp garam masala
09 - 1 tbsp kasoori methi (dried fenugreek leaves)

# Instructions:

01 - Preheat the air fryer to 370°F (188°C) for 5 minutes according to manufacturer's instructions.
02 - In a mixing bowl, combine the chopped potatoes and cauliflower florets.
03 - Add oil, salt, red chili powder, turmeric powder, tandoori masala, and garam masala to the vegetables. Mix thoroughly until all pieces are evenly coated with spices.
04 - Line the air fryer basket with aluminum foil. Arrange the seasoned potatoes and cauliflower in a single layer. Air fry at 370°F (188°C) for 14 minutes, pausing to shake the basket halfway through (around the 7-minute mark).
05 - Transfer the partially cooked vegetables back to the mixing bowl. Add crushed kasoori methi (dried fenugreek leaves) and toss to combine.
06 - Return the mixture to the air fryer basket. Increase temperature to 400°F (204°C) and air fry for an additional 2 minutes to finish cooking and intensify flavors.
07 - Serve the aloo gobi hot with rice or roti as an accompaniment.

# Notes:

01 - Shaking the basket halfway through cooking ensures even browning and prevents sticking.
02 - The final high-temperature roasting adds a delicious crispness to the exterior while maintaining tenderness inside.
